Ingredients
- 1 small watermelon, peeled, deseeded and cubed (about 1kg/2¼lb prepared weight)
- 4 tbsps caster sugar
- Juice of 2 limes
- Pinch of salt
WEIGHT CONVERTER
Method
- Purée the watermelon in a food processor, or a blender, then stir in the sugar, lime juice and salt. Pour the mixture into a freezer container and put it in the freezer until ice crystals start to form.
- Remove from the freezer and mix it well to break up the ice crystals, then return it to the freezer. Keep repeating the stirring process while it’s freezing, so that you have a mass of snowtextured ice. Scoop the granita and serve.
Top Tip for making Watermelon granita
If the granita goes solid, remove from freezer and allow to soften. Scrape it with a knife to give the snow-like texture.
