Lean turkey is excellent for stir frying and makes a nice change from beef and chicken. This citrusy flavoured dish of turkey, orange, sweet pepper and leeks garlic makes a healthy, yet tasty dish served simply with white rice. It's cheap, easy and perfect for those with a busy schedule as it's on the table in under 30 minutes, with minimal washing up!
Ingredients
- 2 oranges
- 450g lean boneless, skinless turkey
- 1 garlic clove, crushed
- 2tbsp light soy sauce
- 2tbsp vegetable oil
- 2 large red peppers, deseeded and sliced
- 1 medium leek, trimmed and shredded
- A large handful beansprouts
- 2tbsp freshly chopped coriander

Method
- Extract the juice from one of the oranges. Cut the turkey into thin strips. Place in a shallow bowl and season with garlic, soy sauce and the orange juice. Mix well and set aside.
- Using a sharp knife, slice the top and bottom off of the other orange. Slicing downwards, take off the skin and as much of the white pith as possible. Holding the orange over a small bowl to catch the juice, slice in between in the segments to remove the flesh and put in the bowl. Set aside.
- Heat the oil in a wok or large frying pan until hot then stir fry the pepper slices for 3-4 mins until just beginning to soften. Remove from the wok using a draining spoon and set aside.
- Drain the turkey well. Reheat the wok or pan and stir fry the turkey for 5 mins. Add the leek and continue to stir fry the mixture for a further 1 min, then return the pepper to the wok or pan along with the orange segments and their juice, and beansprouts, then stir fry for a further 2 mins until tender and the turkey is cooked through. Sprinkle over the chopped coriander.
- Serve immediately with rice as an accompaniment.

If you have a bit of time before cooking this recipe, you can enrich the turkey by letting it marinade in the garlic and orange juice mixture for 1-2 hrs – just cover and chill until required.
