Many fear cooking with the glorious artichoke but with our quick and simple way of steaming it in the microwave, the leaves will be tender and juicy and no need for any bulky steamers clogging up the kitchen work tops. Served with an easy garlic and herb dip, this dish is a real treat for a buffet or as an appetiser if you've got friends coming over for dinner. Make sure you rub lemon over the artichoke before cooking to ensure it keeps its beautiful colour - and get the children to try it too - they'll be pleasantly surprised!
Ingredients
- 1 large artichoke
- 150ml sour cream
- 150ml mayonnaise
- 2 garlic cloves, minced finely
- 2tbsp finely chopped fresh herbs, (parsley and chives)

Method
- Wash the artichoke first then trim the end of the stem and slice an inch off the tip. Pull off any smaller leaves towards the base and on the stem. Place artichoke stem-up in a deep, microwave-safe bowl. Add 1-2 inches of water. Cover bowl with cling film and cook on high for 12-15 minutes depending. Remove form bowl and allow to stand for a few mins before peeling each petal off and arranging on a large platter.
- For the dip, mix the sour cream, mayonnaise, garlic and herbs in a bowl and serve with the artichoke leaves.
