Never know what to do with leftover sausages or salsa dip? Turn them into a new family meal of spicy sausage rice
Ingredients
- 1 onion, chopped
- 1 red pepper, diced
- 1tbsp olive oil
- 225g wild and basmati rice
- 450ml stock
- 6 cooked sausages, sliced
- 1 pot of fresh salsa dip

Method
- Sauté the onion and pepper in the oil until tender. Stir in the rice and stock, cover and simmer for 20 mins until the rice is tender.
- Stir in the sausages and sauce and simmer uncovered over a medium heat for a further 5 mins or until hot. Add the chopped parsley and serve in bowls.
