Slimming World’s Thai red fish curry counts as three of your 5-a-day and uses less than 10 ingredients.
We have lots of Slimming World recipes but this curry is the perfect choice if you’re trying to avoid ordered takeout. Not only is it ready in 35 minutes, it’s also only X per portion. The recipe uses nine ingredients and only has four steps so it’s perfect for a busy weeknight too.
Ingredients
- 2 level tbsp Thai red curry paste
- 2 tbsp tomato purée
- 700ml fish stock
- 100ml light coconut milk
- 200g sugar snap peas, trimmed
- 600g skinless white fish fillets, cut into bite-sized pieces
- 200g cherry tomatoes, left whole
- A small handful of chopped fresh coriander
- Juice of 1 lime, plus extra wedges to serve

Method
- Place the curry paste in a large saucepan and add the tomato purée, stock and coconut milk. Bring to the boil and simmer, uncovered, for 8 minutes.
- Add the sugar snap peas and cook for 5 minutes. Add the fish pieces and cherry tomatoes and cook gently for 5 minutes until the fish is cooked through.
- Remove from the heat and stir in the coriander and lime juice. Serve with extra lime wedges and your choice of side.
Top tips for making Slimming World's Thai red fish curry
This is excellent served with steamed jasmine rice and Asian greens. You can buy packets of microwave jasmine rice that are ready in a couple of minutes.
How can you tell if fish is cooked?
The flesh will look firm and white and go from transparent to opaque. You can also probe it with a thermometer and it should read 63C or above.

Serve this curry with a portion of steamed rice and you’ll still be on track with your Slimming World plan.
