Chocolate rocky road cheesecake is the ultimate treat if you love rocky road and chocolate - two of the best sweet treats around.
There's so much chocolate in this dessert - in the base, the filling and on top. It's perfect for chocoholics everywhere. It's really quick to make - you'll only need about 35 minutes to pull it together, but remember to leave some extra time for it to cool and set (ideally at least 6-8 hours). It's a no-bake recipe, making it great to try with kids, but it goes down really well with grown up as well - it's a good pud to serve after a casual dinner party. Top it with an extra drizzle of melted chocolate - dark, white, or both, to give it an elegant finish.
Ingredients
- 6 chocolate-covered chocolate biscuit bars (e.g Rocky)
- 150g chocolate chip cookies
- 50g unsalted butter
- 7g (4 sheets) leaf gelatin
- 60ml cold water
- 500g cream cheese
- 50g caster sugar
- 30g unsweetened cocoa powder
- ½ tsp vanilla extract
- 75g miniature pink marshmallows
- 75g dried sour cherries
- 200ml double cream
- 25g plain chocolate, to decorate

Method
- Either crush the cookies in a blender, or place in a strong polythene bag and beat with a rolling pin to reduce the biscuits to crumbs.
- Melt the butter and combine with the cookie crumbs. Press mixture into bottom of 20cm/8-inch spring-form cake tin. Chill in fridge.
- In a small saucepan, put the gelatin with the 60ml water and soak for 10 mins to soften then stir over low heat until dissolved. Meanwhile, chop the chocolate biscuit bars into small chunks.
- In a large bowl, combine cream cheese, sugar, cocoa, and vanilla.
- Gradually add the gelatin mixture, and mix until smooth.
- Fold in chopped biscuits, marshmallows and cherries. Lightly whip the cream until softly peaking then fold into the mixture. Spoon evenly over the base then chill until firm.
- Melt the chocolate and drizzle over the top.

You can swap or add in any of your favourite ingredients to Step 6: try nuts, raisins or honeycomb, for instance.
Why has my no-bake cheesecake not set?
If the chocolate rocky road cheesecake doesn't set within 6-8 hours, it could have been that the gelatine was badly stored or heated too quickly. If this happens, you can pop the cheesecake in the freezer for an hour or two to firm up even more. Don't leave it to freeze too long or it will form crystals.
Can I make this chocolate rocky road cheesecake ahead of time?
Absolutely! You will need to leave it to set for 6-8 hours anyway, so it's best to make it the day before and leave it chilling overnight. However, if you prefer you can make it 2 days in advance and leave it chilling in the fridge until needed.
