Rainbow meringues are a fun and quick way to make lovely decorations either for on top of a cake or to just go with a pudding. they're so trendy and Instagram-worthy, and add a pop of colour to any sweet treat. This rainbow meringue recipe is an eye catching addition to any birthday party spread!
Ingredients
- 4 egg whites
- 225g white caster sugar
- 1tsp cornflour
- 1tsp cider vinegar
- Red, yellow, green, blue and violet paste colour
You will need
- 6 disposable piping bags
- 2 baking sheets lined with baking parchment (you can use a little bit of spray grease to make sure the baking parchment is stuck onto the baking sheet securely)

Method
- Heat oven to 100°C. Crack the eggs and separate the whites and yolks, placing the egg whites into a clean bowl, ideally of an electric free-standing mixer and whisk to form stiff peaks. If you don’t have one a glass bowl will work absolutely fine and you can use a hand-held electric whisk. The egg whites are ready if you can turn the bowl upside down and they don’t move.
- Continue whisking the whites, adding the sugar 1tbsp at a time to make a stiff, glossy meringue. Stir in the cornflour and vinegar once all the sugar is added with a metal or plastic spoon. If you use wood it take all of the air out of the meringues.
- Divide the meringue into six bowls, add a dot of colour to each bowl and a dot each of red and yellow to make orange. Stir to evenly combine the colours being careful not to take too much of the air out of the meringue.
- Spoon each coloured meringue into a different piping bag and then pipe 2cm dots on to the two baking sheets lined with baking parchment.
- Bake for 1hr, turn off the heat, and leave in the oven for another hour to dry out
- Arrange the meringues in colour groups or lines to create a stunning rainbow.
