Sometime nothing can beat a sandwich; but often shop bought ones come with calorific fillings and a hefty price tag. With this special combination of tangy goat’s cheese, salty prosciutto and sweet fig, we think this sandwich is a real winner. Plus with only one slice of bread it’s half the carbs and half the calories! Try to get the best ingredients you can afford for a truly luxurious snack. You could even turn this into a great canapé at a dinner party by using tiny crostini bread.

Ingredients

  • 2 slices granary seeded bread
  • 50g soft goat’s cheese
  • 2 slices of prosciutto ham
  • 1 fig, quartered
  • Rocket, to garnish

  1. Spread goat’s cheese over the bread. Top with a slice of prosciutto and add quarters of the fig. Garnish with rocket. Serve.

Seeded granary bread works best here but if you prefer white, try to get a good quality whole loaf which you can cut yourself.
