Make these delicious potato clouds with the kids, they're really simple to make and taste good too. These tasty treats combine mashed potato with cheese and eggs to transform your usual mashed potato into a fun treat. They only take 25 mins to cook in the oven too which makes them a super speedy option for dinner or lunch. Ingredients
- 350g (roughly) of cooked potato
- 70g mature cheddar cheese
- 2 large eggs

Method
- First of all you will need to peel, chop and boil the potatoes. If your little one is particularly hands on you might prefer to do this the night before. However, if you have an older child who is safe to use a peeler, then they could help to peel the potatoes.
- Preheat the oven to 200C/400F/Gas Mark 6. Once the potatoes are cooked through, they can be drained and left to cool for a few minutes while you prepare the rest of the ingredients.
- Ask your child to help weigh the cheese before you grate it onto a plate. If you wish to use the optional ham, then they could tear it into small pieces with their fingers, or perhaps snip up chives, spring onions or bacon with scissors. The choices are endless!
- Once the potato has cooled off a bit you can move on to the really fun part. Pass your child the masher and watch them enjoy pushing it down into the mashed potato. My little boy made lots of strange but funny groaning noises; it was obviously hard work!
- Now tip the mashed potato into the bowl of your chosen ingredients. Quickly grab the eggs before your excited child makes a lunge for them. My little boy is obsessed with cracking eggs and, in one of our wrestling matches, we ended up with gloopy mess on the floor. So be warned; you need to keep your wits about you!
- Hand your little angel a wooden spoon or whisk and let them get busy. Once everything is combined, they can move on to greasing the muffin tin with butter. Don't worry if they are overly generous with the butter as it will no doubt make the potato clouds even tastier. It will also help any stubborn clouds come away from the tin!
- Pass a spoon to your child then watch them dollop spoonfuls of mixture into the tin with careless abandon.
- Now it is your turn to take over. Grab the tray and place into the preheated oven. Leave to cook for approximately 20 to 25 minutes.
- When the potato clouds are raised and a light golden brown colour, take from the oven and immediately flick out onto a wire rack to cool. If you get side tracked and leave them in the tin then they will probably stick! You can enjoy the potato clouds hot or cold. It is entirely up to you!
Top Tip for making Potato clouds
You could also add bacon, ham, spring onions and chives to the mix too!
