Transform your ordinary pitta bread into a dinnertime treat with this easy pitta pesto pizza recipe. With generous layers of pesto and mozzarella cheese, it comes in at just 500 calories a serving - bonus! We think the kids are going to love these mini treats - especially if they're topped with their favourite veggies.
Ingredients
- 1 pitta bread
- 1tbsp good ready-made pesto sauce
- 60g ready-grated mozzarella
- 2 slices Parma ham
- 6 cherry tomatoes
- A little olive oil

Method
- Heat the grill. Put a pitta on a baking tray and grill on one side to warm it through. Turn it over and spread the pesto over, and then most of the cheese. Add torn ham, and the rest of the cheese. Put the tomatoes on the tray, and drizzle them, and the pizza, with oil.
- Grill until the cheese has melted and tomatoes are just bursting. Grind over some black pepper. Serve the pitta pizza with a side salad, and cornichons, if you like.
Top Tip for making Pitta pesto pizza
Smoked ham and/or anchovies work well in place of the Parma ham.
