Tired of Pimm's and lemonade? Make a refreshing Pimm's mojito with lots of lime, mint, cucumber and soda water instead. It's less sugary than a classic Pimm's Cup cocktail...
Ingredients
- Juice of 1 lime
- Small handful fresh mint leaves – around 10, plus extra to garnish
- 2 tsp white caster sugar
- 45ml Pimm's
- Soda water
- Ice
- Thin slices of cucumber, cut into crescents

Method
- Add the lime juice, mint and sugar to a chilled hi-ball glass and muddle with a cocktail muddler to mash up the mint leaves with the sugar and juice.
- Fill the glass 2/3 full with ice cubes. Pour in the Pimm's. Top up with soda water and stir well to combine. Add the cucumber slices. Garnish with extra mint leaves and serve immediately.
Top Tip for making Pimm's mojito
Thin slices of orange and lemon would also make a delicious addition to this Pimm's mojito.
