You won't believe how quick and easy this pasta with spinach, blue cheese and pine nuts is to make! Just a few storecupboard ingredients transform into an amazing bowl of comfort food, and it'll only take you 20 minutes. The quantities in the recipe serve one, but can easily be scaled up to serve a crowd.
Ingredients
- 90g penne, or your favourite pasta
- Good dash of olive oil
- 60g fresh spinach
- Nutmeg, optional
- 60g blue cheese
- 1tbsp toasted pine nuts

Method
- Add the pasta to a pan of boiling water and cook according to the pack instructions. Drain quickly, keeping a little of the water in the pasta, put it back in the pan on a low heat. Add some oil and the spinach leaves, and stir until they start to wilt.
- Season well and grate in a little fresh nutmeg, if using, then add crumbled blue cheese. Put in a bowl and sprinkle with the toasted pine nuts.

When you buy fresh spinach, wash it well, dry it in a salad spinner and put in a plastic box. It will keep for a week in the fridge.
