Ingredients

  • 2 large uncooked chicken
  • 4 oranges
  • 2 tbs. fresh mixed herbs
  • 1 cup walnut nut oil

Method

  1. Preheat oven to 180°C. Place chickens in a baking paper lined roasting tray breast side up.
  2. Drizzle with oil. Grate the skin of one of the oranges and juice both oranges over the chicken.
  3. Finally sprinkle herbs over the top and roast chickens for 11/2 hours or until cooked to your liking.
  4. Remove from oven and cover with foil, allow to rest for 5 minutes before cutting and serving.

It usually takes 30 minutes per 500g of weight to cook a chicken in a preheated oven at 180°C.
