Miso fried chicken is juicy on the inside and flavoured with delicious miso paste, which gives it a sweet and savoury edge. Miso paste is really easy to find and most large supermarkets will stock it. Everyone loves crispy fried chicken, but the miso adds a new flavour to it that makes it new and exciting; it's going to be your new go-to fried chicken recipe and everyone will be asking for the recipe! By frying the chicken to start with and then finishing it in a hot oven, you'll get perfectly tender meat with crispy skin.
Ingredients
- 75g plain flour
- ½tsp baking powder
- 1½tsp white pepper
- 2tsp paprika
- 125g white miso paste
- 25g runny honey
- 25ml rice wine vinegar
- 2 crushed garlic cloves
- 900g chicken pieces
- vegetable oil for frying

Method
- In a bowl, mix the plain flour with the baking powder, the white pepper and 2tsp paprika.
- In another bowl, mix the white miso paste with the runny honey, the rice wine vinegar and 2 crushed garlic cloves.
- Toss the chicken pieces in the flour, then in the paste and again in the flour.
- Pour vegetable oil into a pan to a depth of 8cm and heat to 180C. Fry the chicken for 2-3 mins on each side to crisp up, then finish in an oven heated to 170C fan, gas 5 until cooked through.
Top Tip for making Miso fried chicken
This recipe tastes just as nice with a bit of a kick to it. If you want a hotter version, add chilli flakes to your batter, but be careful, especially if kids are going to be eating it.
