This marshmallow pie isn’t as sweet as you’d expect. Made with melted marshmallows and cream, the filling is poured over bitter chocolate biscuits to compliment the sweet creaminess. It’s so simple to make and the perfect dessert recipe that the kids can help you make at the weekends or after school. It only takes 25 mins to rustle up and 10 mins to cook meaning you’ll have more time to enjoy this tasty treat.
Ingredients
For the base:
- 2x packets of Oreo cookies
- 75g melted butter
For the filling:
- 300g marshmallows
- 120ml milk
- 350ml double cream
- 50g chilled dark chocolate

Method
- Preheat oven to 190°C/375°F/Fan 170°C/Gas Mark 5. You will need a 20cm Springform tin.
- To make the base, place the Oreo Cookies into a food processor and blitz until the consistency of breadcrumbs
- Add the melted butter and blitz again. Press into the base and sides of the tin
- Bake for 10 minutes. Remove from the oven and set aside to cool
- Place the marshmallows and milk in a large saucepan and heat gently. Stir constantly until melted and smooth
- Remove from the heat and allow to cool for at least 30 minutes
- In a separate bowl whisk the cream until stiff peaks form
- Fold in the melted marshmallow mixture. Grate the chocolate and stir through
- Pour into the biscuit base and chill for at least 3 hours, preferably overnight. Remove from the tin and serve

If you use pink and white marshmallows you get a pastel pink filling
