Maple roasted sweet potatoes are the perfect side to some slow roast pork belly or any other roast meat. They're sweet, soft and fluffy and should be served with lime wedges to cut through the sweetness a little. The perfect autumn or winter warmer, but also ideal during baked on a barbecue, summer or winter! They are ready in under an hour, but are so worth the wait. This recipe is a spin that takes baked potatoes to a new level that the whole family will love. Delicious!
Ingredients
- 6 sweet potatoes
- 2tbsp olive oil
- 1tbsp smoked sweet paprika
- 4-5tbsp maple syrup
- 2 limes, cut into wedges

Method
Heat the oven to 180C, gas 6. Rub the potatoes with olive oil and paprika. Put them on a baking tray and roast for 30-40 mins until cooked all the way through.
Drizzle the maple syrup over the potatoes, return to the oven and cook for a further 5-8 mins, until golden and crisp. Serve with the lime wedges.
