This lemon and herb mayo is very easy to make and it's a great companion to herb roasted potatoes. Spoon mayonnaise into a small serving bowl and mix some chopped parsley, mint and basil into it. The lemon zest and juice give the sumptuous mayo its fresh flavour. Try this creamy mayo together with some garlic roast chicken, zesty ricotta and lemon veggies and some courgette, pea shoot and pomegranate salad for an appetizing Sunday roast for the whole family (all recipes can be searched for in the bar above). The lemon and herb mayo has a dash of homemade feel and look to it, which is great when you want to bring a touch of luxury to an everyday meal. Ingredients
- 100g mayonnaise (we used Delouis)
- 1tsp chopped parsley
- 1tsp chopped mint
- 1tsp chopped basil
- Zest and juice ½ lemon

- Spoon the mayonnaise into a small serving bowl, then stir through the herbs, lemon zest and juice. Season with black pepper to your liking and serve.
