This easy vegetarian recipe is ready in just 30 mins, so it's simple to make and everyone can enjoy it! Cauliflower and kale are trendy ingredients, which are also good for you. They really come to life with spices, tahini and plenty of fresh herbs.
Ingredients
- 2 baby cauliflowers
- 3tbsp olive oil
- 1tbsp ras el hanout
- 75g kale
- 4tbsp Greek yogurt
- 2tsp tahini
- Juice 1 lemon
- Small handful each chopped parsley, coriander and mint

Method
- Heat the oven to 200C, gas 6. Rub the cauliflowers with 2tbsp olive oil, then sprinkle over the ras el hanout. Roast for 20 mins untilthe cauliflowers are just cooked through and lightly golden. Add the kale, tossed in the remaining oil, for the final 5 mins.
- Meanwhile, to make the dressing, mix together the yogurt, tahini, lemon juice and herbs. To serve, put the cauliflower on the kale and pour over the sauce.

You could make this same recipe with a large cauliflower and serve it so that guests at your dinner party can carve sections off individually - there will be plenty to go round!
