These little biscuits are gone in a bite. They’re a melt in the mouth sweet treat. They’re called thumbprints as the dent in dough is made by using your thumb. This part of the biscuit is then filled with jam, which means they are super fruity as well as buttery too. These handmade treats are sure to get the kids in the kitchen this week. You could also try filling them with Nutella or peanut butter instead of jam too.

Ingredients

  • 250g softened butter
  • 140g icing sugar
  • 1 egg yolk
  • 100g cream cheese
  • 1tsp vanilla extract
  • Zest of 1 lemon
  • 350g plain flour
  • ¼tsp baking powder
  • ¼tsp bicarbonate of soda
  • ¼tsp salt
  • 8tbsp of a jam of your choice

Method

  1. Preheat oven to 180°C/350°F/Fan 160°C/Gas Mark 4 and line 3 baking sheets with baking parchment or greaseproof paper
  2. In a large bowl cream together the butter, sugar and egg yolk
  3. Add the cream cheese, vanilla extract and lemon zest and beat until smooth
  4. Sift together the flour, baking powder, bicarbonate of soda and salt
  5. Add to the wet mixture and mix until a dough is formed. Chill for 15 minutes
  6. Break off enough to make a 1½” ball, place on your baking tray and press your thumb into the centre to create a dimple. Fill the dimple with jam.
  7. Repeat until all the dough and jam is used. Bake for 10 to 12 minutes
  8. Remove from the oven and allow to cool for 5 minutes before transferring to a wire rack to cool fully

These thumbprints are best eaten on the same day, but if you don’t want to make so many, why not freeze some of the dough to use at a later date
