Think a sponge pudding takes ages to cook? Well think again. Our ginger and orange pudding takes only minutes to prepare and is cooked in the microwave for 4 mins. This tangy ginger and orange pudding makes a delicious dessert treat that the whole family can enjoy. The citrus orange works really well alongside the sharp flavour from the ground ginger. Serve with warm homemade custard or ice cream for an extra special treat. You could also try using lemon in this recipe instead of orange. A sweet, syrup sauce makes this pudding gleam.
Ingredients
- 90g butter, at room temperature
- 90g golden caster sugar
- 90g self-raising flour
- 2 medium eggs
- ½tsp baking powder
- 1tsp ground ginger
- 5tsp milk or warm water
- Finely grated zest of 1 orange
For the sauce:
- Juice of 1 orange (3-4 tbsp)
- 4 tbsp chunky Seville orange marmalade, or your favourite marmalade
- 900ml (1½ pint) pudding basin, well buttered

Method
- Beat the butter and sugar until light and fluffy. Add 1 tbsp of the flour and an egg at a time, whisking well. Fold in the remaining flour with the rest of the ingredients.
- Spoon the mixture into the basin and microwave on full power for 4 mins in an 850-watt microwave, or 3½ mins in a 900-watt microwave, until just cooked.
- Meanwhile, make the sauce: Bring the orange juice to the boil and reduce it by half. Add the marmalade and stir in until it melts.
- Turn the pud out onto a plate. Pour the sauce over.
Top Tip for making Ginger and orange pudding
Add grated lemon zest tothe pudding mix. Make asauce with lemon juice and golden syrup for a change.
