This is a light, refreshing “get up and go” breakfast, perfect for serving as a starter at brunch. To ring the changes, try adding a spoonful of natural yoghurt and a drizzle of honey to taste. If you can’t find Cantaloupe melon, use honeydew, and for added colour add some red seedless grapes, too. In sumer, you can use fresh berries (such as strawberries, raspberries, blackberries and blueberries) instead of the melon and pineapple.
Ingredients
- 1 medium pineapple
- 1 small bunch of seedless green grapes
- 1 Cantaloupe melon
- 2 kiwi fruits
- about 500 sparkling white grape juice
- sprigs of fresh mint

Method
- Peel, core and cube the pineapple and tip into a large bowl with he juice from the pineapple. Halve the grapes and add to the bowl. Halve, de-seed, peel and dice the melon and add to the bowl. Peel and chop the kiwis and mix with the other fruit.
- Add enough sparkling fruit juice to come three-quarters of the way up the bowl.
Top Tip for making Fizzy fruit salad
If you don’t like sparkling fruit juice use ordinary fruit juice instead (but you won’t need as muchliquid).
