We really cannot over emphasise the easiness of this easy Irish soda bread recipe – with no need to prove or need, it’s the quickest way to get fresh bread without buying a shop-bought loaf. And trust us, once you’ve seen how impressive this easy Irish soda bread is, you’ll be baking batch loads. These bread pots are perfect for when you’re entertaining and want to show off a little. The terracotta flowerpots are so chic and will give a real professional finish should you choose to post a picture of your baked goods. Soda bread uses buttermilk as the active ingredient and most supermarkets stock it. However, you can make a substitute using a tablespoon of lemon juice and 250ml of milk. Simply mix the two ingredients together and leave to stand for 5 minutes. You’ll notice the colour and consistency change a little and then it is ready to use in place of the buttermilk. This is often cheaper and it is great if you need to make a specific volume that doesn’t come in shop-bought cartons.

  • 500g granary flour
  • 100g porridge oats
  • 2tsp bicarbonate of soda
  • 2tbsp dark muscovado sugar
  • 284ml carton buttermilk

Method

  1. Heat the oven to 200°C. Put 400g of the flour, the oats, 1tsp salt and the bicarbonate of soda in a bowl.
  2. Rub in the muscovado sugar, to break up any lumps. Pour in the carton of buttermilk and 4tbsp water.
  3. Mix everything together with clean hands to make a wet, sticky dough. Sprinkle the surface with the remaining flour.
  4. Knead the dough lightly to make a smooth round. Cut the dough into 6 pieces. Roll each one into a ball, then roll the sides to elongate slightly. 5 Pop each one into the muffin case-lined terracotta pots. Bake rolls for 30 mins.
