Quick! You've got guests coming round for coffee in an hour. You're all out of mince pies, so what can you give them? Try these really quick and easy cranberry, mincemeat and pecan bites. Use shop bought puff pastry (the pre-rolled stuff is best) and then the rest could just be leftovers - that half-used jar of mincemeat, the final bit of cranberry sauce and some pecans (but any nuts will do). Spread the three ingredients over the base of the pastry, roll it up and bake in a hot oven for 20 minutes. Hey presto! Perfect for Christmas, your New Year's Eve party or when January just seems a bit gloomy.
Ingredients
- 320g pre-rolled puff pastry
- 4 tbsp mincemeat
- 2 tbsp cranberry sauce
- Handful of pecan nuts
- Beaten egg to glaze

Method
- Preheat the oven to 200°C/400°F/Gas Mark 6.
- Unwrap the pastry and lay flat. Spread the mincemeat evenly all over the pastry, followed by the cranberry sauce and then the chopped pecans.
- Turn the pastry width-ways and roll up each end so that they meet in the middle. Turn your pastry sausage over so the flat side is face-up. Using a serrated knife, cut into 8 pieces.
- Place on a baking tray and brush with beaten egg. Cook for 20 minutes until the pastry is golden and puffed. Leave to cool and then cut in half to serve.

Swap the cranberries, mincemeat and pecans for chopped apple, raisins, walnuts and cinnamon for mini strudels.
