Courgette fries with lemon mayo make a super easy snack that you can share at a party. Make a big batch and share with the whole family. Courgette fries make a change from chips, so it's really worth the extra effort of coating them in tempura and frying them. Use a tempura batter mix so it's hassle-free. The lemon mayo makes perfect accompaniment as it adds a little extra zing. This recipe works out at just 54p per person, so it's great value as well as an interesting party bite. Ingredients
- 2 courgettes
- 350ml sunflower oil
- 150g pack tempura batter
- lemon mayonnaise and shredded basil, to serve

Method
Thinly slice 2 courgettes and set aside. Meanwhile, gently heat 350ml sunflower oil in a deep pan until hot.
Mix up a packet of tempura batter mix according to the pack instructions. Add the courgette and carefully dip into the hot oil. Fry for 2-3 mins until puffed and lightly golden.
Serve drizzled with lemon mayonnaise mixed with shredded basil.
