Our chorizo burger is perfect for spicing up the chicken option at a party. This chorizo burger is smoky with a little bit of a kick that any friends or family are sure to love. Why not cook the chicken on the barbecue to add another dimension of smokey flavour to this delicious chicken and chorizo burger. This delicious chorizo burger would be perfect with some sweet potato or courgette fries and coleslaw. If you would like to eat this burger without the bun, why not just use a skewer and place a leaf of lettuce on either side. A top tip from our team is to take the chicken breasts out of the fridge half an hour before you want to cook them to ensure that they cook evenly through and are not dry by the time the middle of the chicken is cooked.
Ingredients
- 1tsp peri-peri seasoning rub (we used Nando’s)
- 1 garlic clove, crushed
- 1tbsp olive oil
- 1tbsp lemon juice
- 2 chicken breast fillets, cut in half horizontally
- 100g chorizo cooking sausage, thickly sliced
- 4 sourdough rolls, halved and toasted to golden brown
- mustard, to serve
- mayonnaise, to serve
- lettuce, to serve
- feta cheese, to serve
- basil leaves, to serve

Method
- Mix together the peri-peri seasoning, garlic, oil and lemon juice in a bowl to create a rub. Rub over both sides of the chicken evenly.
- Heat a griddle pan over a medium high heat until hot. Add the chicken and cook for 3 to 5 minutes on each side (depending on the thickness of the chicken breast), until it’s browned and cooked through. Remove from the pan and set aside. Add the chorizo slices to the griddle pan and cook for 2 minutes on each side, or until cooked through
- Serve each roll, topped with a dollop of mustard and mayo, a few lettuce leaves, one piece of chicken, a couple of chorizo slices, crumbled feta and basil leaves. Pop the top half of the bun on to finish. Enjoy.
