This one pot wonder, chilli con carne meatballs recipe is great if you're into spicy food. Turn your usual chilli into hearty meatballs with this lower-fat recipe from Weight Watchers. This recipe serves 4 people and will take 40 mins to prepare and cook. Each portion of meatballs works out at only 371 calories. Serve your meatballs with wholewheat pasta, brown rice or skip the carbs and opt for a freshly prepared salad or stir-fried veg instead.
Ingredients
- 500g extra lean beef mince
- 30g sachet chilli con carne spice mix
- 1 onion, grated
- Calorie controlled cooking spray
- 1 green chilli, de-seeded and sliced
- 2 tbsp tomato puree
- 2 x 400g cans chopped tomatoes
- 150ml beef stock
- 400g can black beans, drained and rinsed
- Salt and freshly ground black pepper
To serve (per person)
:
- 75g of dried brown rice
- 1/4 x 170 g pot reduced fat guacamole
- 1 tablespoon of reduced fat soured cream

Method
- Put the beef mince, half the chilli spice mix and the onion in a large bowl. Mix together with your hands and then shape into 24 small meatballs.
- Heat a wide deep saucepan and spray with the cooking spray. Cook the meatballs in batches for 10 minutes, turning occasionally until browned all over and almost cooked. Remove and set aside.
- Spray the pan again with the cooking spray and add the chilli, tomato puree and remaining spice mix. Cook for 1 minute. Stir in the tomatoes and stock and bring to the boil. Simmer for 10 minutes, stirring occasionally.
- Return the meatballs to the pan and stir in the black beans. Simmer for a further 5 minutes until the sauce is thickened and the meatballs are cooked. Check the seasoning and serve immediately.
- To complete the fiesta, serve with dried brown rice, cooked according to the packet instructions, guacamole and soured cream.
Top Tip for making Weight Watchers chilli con carne meatballs
You can replace the beef with 500g lean turkey mince instead.
