These chicken kebabs with peanut dip are one of our favourites for summer barbecues.
You might not have thought of making your own peanut satay sauce before, but it's really easy and the taste is better than anything you can get from a jar. Use crunchy peanut butter, even though you're blending the sauce to quite a smooth result - it gives just the right texture. It's the perfect dip for this spiced, yoghurt-marinated chicken. Cook on the barbecue outside, or under the grill if you prefer. These make a great buffet food option, and any leftovers are great on picnics or in lunchtime salads the next day.
Ingredients
- 2 chicken fillets, skinless and cut into chunks
- 3 tbsp natural yogurt
- 1 tsp finely chopped fresh root ginger
- Pinch of ground turmeric
- Pinch of ground coriander
- Pinch of ground cumin
- Salt and freshly ground black pepper
For the satay sauce:
- 2 tbsp crunchy peanut butter
- 1 tbsp soy sauce
- Squeeze of lime juice
- ½ tsp curry paste
- 3 tbsp natural yogurt

Method
- Place the chicken in a bowl with the yogurt, ginger, ground spices and seasoning.
- Mix well to coat the chicken.
- Thread the chicken onto 8 mini kebab skewers and cook under a pre-heated grill for about 10 minutes, turning frequently until the chicken is cooked.
- Meanwhile, make the satay sauce by mixing all the ingredients together and blending gently until smooth.
- Serve the chicken kebabs with the satay sauce and a garnish of shredded cucumber and spring onion.
Top tip for making chicken kebabs with peanut dip
This recipe only takes 20 minutes to prepare and cook, but if you have time beforehand, it's worth prepping the chicken in the yoghurt mix an hour or two in advance, to boost the flavours even more.
