Breakfast burrito is a really delicious way to start the weekend - super simple, this burrito recipe takes only 15 minutes to make! Everyone likes differing levels of heat, especially for breakfast, but if you like hot food, you can easily add chilli flakes, or even fresh chillies for an added kick. The microwave rice is a bit of a cheat but it means you can have cooked rice to use in a matter of minutes, rather than waiting for it to cook.
Ingredients
- 2tbsp vegetable oil
- 2-4 medium eggs
- 250g pack ready-cooked Tilda Mexican chili & bean steamed basmati rice
- 2 flour tortillas
- 3 tbsp guacamole
- 1 baby gem lettuce, chopped
- 1-2tbsp tomato and chili salsa
- ½ bunch coriander, leaves chopped
- Squeeze lime

Method
Heat the oil in a pan and fry the eggs for a few minutes.
Heat the rice according to pack instructions. Warm the tortillas in the microwave for a few seconds or on a hot griddle pan.
Spread guacamole in the middle of the tortillas, then top with lettuce. Add the rice, eggs, a little salsa, coriander and a squeeze of lime, then roll up and cut in half to serve.
