This simple blackberry sorbet is bursting with flavour and will surely create a wow factor with your friends and family with its stunning vibrant colour. Don't worry about needing an ice cream machine you can make this recipe by hand using an electric hand mixer to whisk 3 times once every 45 mins until the ice crystals are broken down. A great recipe to make ahead as it will store in the freezer. Be money savy and cut costs by using frozen blackberries in the winter or picking them yourself in the summer. Serve smooth scoops after dinner served with a few berries for a low fat treat.
Ingredients
- 125g caster sugar
- 300g blackberries
- 300g fat free fromage frais

Method
- Pour the sugar into a medium saucepan and add 100ml water. Place over a gentle heat and stir frequently to dissolve the sugar. Once dissolved bring to the boil then set aside.
- Place the blackberries in a food processor and blitz until liquid. Push through a fine sieve to remove the seeds then stir through the sugar syrup. Transfer to the freezer for 20 mins until chilled.
- Stir through the fromage frais and whisk with an electric hand mixer until smooth. Pour into an ice cream machine and churn until frozen or alternatively pour into a shallow container and transfer to the freezer. After approximately 45 mins beat the sorbet with an electric hand mixer to break down the ice crystals. Return to the freezer and repeat this process a further 2 times to ensure a smooth sorbet. Then leave to freeze.
Top Tip for making Blackberry sorbet
Transfer the sorbet from the freezer to the fridge 20 mins before serving so its softens evenly.
