Cumberland sauce goes really well with sausages but we also like it with beef. Try out this recipe when your friends come over - they'll be impressed
Ingredients
- 1tbsp olive oil
- small knob of butter
- 4 beef fillets (approx 1in thick)
- 120g pancetta or thinnly sliced ham
- 10g mushrooms chopped into small pieces
- 1 small glass red wine (approx 100ml)
- 4dsp Cumberland Sauce

Method
- Heat the oil and butter in a heavy bottomed frying pan and fry the beef fillet for 2 mins each side ? they should be rare in the middle ? cook for longer if you prefer.
- Transfer to a plate.
- Fry the pancetta or ham and mushrooms in the juices in the pan for 5 mins until slightly golden.
- Add the red wine, leave to bubble for a min, then add the Cumberland sauce and heat through for a couple of minutes.
- Serve the beef fillet with a little sauce drizzled over the top, eat with creamy mash and steamed green vegetables or salad.
