If you're looking for a great dinner party recipe, this tasty salmon dish looks impressive and is healthy too.
Ingredients
- 50g butter, diced
- 1 fresh whole salmon, approx 2kg
- 1 onion, sliced
- 3 bay leaves
- 4 sprigs fresh parsley
- 1 lemon
- 250ml jar mayonnaise

Method
- Preheat oven to 140ºC/284ºF/gas 1. Butter a piece of foil large enough to encase the whole fish. Put salmon on the centre of foil.
- Fill the cavity of the fish with half the butter, onion, bay leaves and parsley. Add half the lemon cut into slices, and dot the remaining butter on top. Wrap the foil loosely around the fish but tightly seal the edges. Put on a baking sheet and bake for 2 hrs 10 mins. Leave to cool, then chill overnight.
- Gently remove the salmon skin and ease the fillets off bone. Stir the juice of the remaining lemon half into the mayonnaise, and serve with the fish.
